A Michelin Affair at Es Fanals, Jumeirah Mallorca

On 22nd June, forty guests saw Executive Chef Javier Lopez combine his creative genius with the culinary mastery of Jumeirah Capri Palace and Jumeirah Burj Al Arab’s two-Michelin-starred Executive Culinary Chef Andrea Migliaccio. A whole host of unforgettable gastronomic moments were created on Saturday evening as guests sampled a unique ten-course tasting menu with a carefully curated wine pairing. Highlights included the tagliolini al limone with red prawns, burrata cheese, oyster leaf and glasswort paired with a Sicilian white from the soils of Mount Etna.

The Amberjack Sandwich with smoked tomatoes and lime was a refreshing start, bursting with flavours that perfectly balanced the earthy taste of the tomatoes with the zest of lime.  Followed by the cod and potatoes beignet, crispy and golden, that melted in the mouth, a delightful interplay of textures.

The blue lobster with Mediterranean salad was a highlight, with the lobster cooked to perfection, complemented by the citrusy salad that added a tangy freshness. The lemon tagliolini with red prawns and burrata cheese was another standout; the pasta was impeccably al dente, and the burrata added a creamy richness – we were taken from Italy to Mallorca, plate by plate.

The lemon sorbet with toasted almond, tarragon pesto and yogurt mousse was a palate cleanser like no other, the tartness of the lemon sorbet was beautifully balanced by the nutty and herbaceous elements. The cocoa from Mallorca dessert, featuring carob ice cream and chocolate cremeux, was a decadent finale, rich and indulgent.

The wine selection at Es Fanals is carefully chosen to complement the dishes. The Moet Chandon and the selection of whites and reds, including the Cervaro Della Sala IGT Umbria and Castell Miquell Stairway Owners Edition, enhanced the dining experience, each sip perfectly paired with every course.

The service was impeccable. The staff were attentive, knowledgeable, and passionate about the food and wine they served. Their recommendations were spot-on, and they ensured that every need was met with a smile. If you need it, they have already done it.

The philosophy of Es Fanals is to elevate the authentic flavours from the Balearic Islands to the centre stage and champion local, seasonal ingredients. With dishes that focus on flavours of the Mediterranean, this second Michelin-starred event encapsulated the essence of Jumeirah Mallorca’s commitment to culinary excellence and innovation.
